Victoria Sandwich - Royal Cake


Sandwich "Victoria" - a traditional English sponge cake, consisting of two biscuits, between which a layer of thick strawberry jam and whipped cream. Queen Victoria ruled England for a long time. Perhaps it is one of the longest-ruling monarchs. The Queen’s favorite cake, named after her, survived Victoria for a long time, and to this day it is one of the most popular desserts not only on the shores of foggy Albion, but also around the world.

The biscuit is prepared simply, it turns elastic and high. I recommend using a biscuit recipe as a base for making homemade cakes.

Whipping cream should be oily (at least 30%), if there are none, replace them with any light homemade cream.

The finished dough is creamy and silky, homogeneous, without lumps of flour. At this stage, we heat the oven to a temperature of 165 degrees Celsius.

Cook the biscuit for about 30 minutes on the middle shelf of the oven. We check readiness with a wooden stick - it should come out dry from the thickest part of the biscuit.

Cool the cake to room temperature and cut into two equal parts.

Pour the 33% cream into the mixer bowl, whisk first at low speeds, gradually increase the speed and add the powdered sugar in small portions.
